Shrimp and Asparagus Stir-Fry  

1 teaspoon vegetable oil
1 clove garlic, minced
1 teaspoon minced ginger root
1 scallion, thinly sliced
1 bunch asparagus, tough stems snapped off, cut on the diagonal in 1-inch pieces
¾ lb shrimp, peeled and deveined
½ teaspoon sesame oil
2 teaspoons sherry
1 tablespoon soy sauce

Heat the vegetable oil on medium high in a large skillet or wok.  Add the garlic, ginger, and scallion and stir-fry briefly.  Add the asparagus and stir fry 5 minutes.  Add the shrimp and continue to stir, 5 minutes or until shrimp is nearly cooked through.  Meanwhile, mix the sesame oil, sherry, and soy sauce in a small bowl.  When the shrimp is almost cooked, add the sauce mix and stir to heat and to finish cooking the asparagus and shrimp.  Serve immediately over rice.

A teaspoon of hoisin sauce and a dash of red pepper flakes are both good additions to this stir fry sauce.  Add them with the sauce ingredients.
