Fish in a Packet
(Based on High Flavor Low Fat)

This is so easy!  Leave out any ingredients you don’t like.

4 6-ounce fillets of fish (Chilean sea bass, halibut, cod)
1 large or 2 small tomatoes, thinly sliced
1 large or 2 small scallions, finely chopped
1 jalapeño chili, finely chopped
2 tablespoons cilantro, chopped
1 lime, cut in half
salt and pepper to taste

Preheat oven to 450°. Create 4 large squares of doubled aluminum foil by tearing off twice the length and folding in half. 

Spray each foil square lightly with cooking spray.  On each square, lay one fish fillet.  Divide tomato slices among the fillets, sprinkle each with scallions, chili, and cilantro, squeeze the lime halves over the fillets, and sprinkle with salt and pepper.  

Fold the foil squares up over the fillets and roll the top over, leaving some air space.  Roll up the ends to seal the packets.  Bake in 450° oven for 25 minutes.  Open the foil squares carefully, since steam is very hot!
